INGREDIENTS
2 pounds chicken breasts (thawed)*
1 ½ tablespoons cornstarch (add at end)
¼ cup water
sriracha to taste (optional)
Sweet Chili Sesame Sauce
⅓ cup low sodium soy sauce
⅓ cup ketchup
⅓ cup packed brown sugar
1 tablespoon toasted sesame oil
1 ½ teaspoons garlic powder or 3-4 garlic cloves minced
1 teaspoon salt
¼ teaspoon pepper
Garnishes (optional)
toasted sesame seeds
chopped green onions
INSTRUCTIONS
- Add chicken to the bottom of your crockpot.
- Whisk the Sweet Chili Sesame Sauce ingredients together in a medium bowl. Pour over chicken.
- Cook on low for 5-7 hours or on high for 3-4 hours.
- Shred chicken and add 1 ½ tablespoons cornstarch mixed with ¼ cup water to the crockpot. Stir contents around. Cook on high for 20-30 minutes until sauce thickens. Taste and add Sriracha for spicier, brown sugar for sweeter if desired.
- Serve with rice and garnish with sesame seeds and green onions.
RECIPE NOTES
- You can use frozen chicken breasts but just be aware that they will release more water so you will need to increase the cornstarch in order to thicken the liquid at the end.
- If you don't like heat at all, start with 2 tablespoons Asian Sweet Chili Sauce. You can always add more at the end of cooking.
- Hoisin sauce can be found in the Asian section of your grocery store.

Loaded Chicken Potato Bake

Ingredients
- 2 pounds chicken (I used 3 boneless, skinless chicken breasts)
- 2 pounds red potatoes (about 5 large)
- 2 tablespoons olive oil
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ pound bacon
- 1 ½ cups cheddar cheese
- ½ cup Romano cheese (you can use all cheddar)
- 4 green onions
Instructions
- Preheat oven to 400°. Coat a 9" X 13" casserole dish with cooking spray.
- Peel potatoes and cut into 1" pieces. Cut chicken into 1" pieces. Place in casserole dish.
- In a small bowl mix olive oil, pepper, garlic powder,salt, onion powder, and paprika until well combined. Pour over chicken and potatoes. Toss to coat.
- Bake, uncovered, for 50-60 minutes or until potatoes are tender.
- While the chicken and potatoes bake fry bacon and crumble. Chop green onions
- When potatoes are tender top with cheeses, bacon and green onions and bake until cheese melts, about 5 minutes.

Ingredients
- 4 bone in, skin on chicken thighs
- 5 cloves garlic, crushed
- ¼ cup butter
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 350 degrees
- Pat your chicken thighs dry and season both sides with salt and pepper
- Add your butter and olive oil into a large, oven proof skillet (cast irons are perfect for this) over medium heat
- When the butter is melted, add your garlic cloves. You just want the garlic cloves to be lightly crushed, so they still remain in one piece for easy removal, but also release all that flavor into the butter
- When your pan is hot, add your chicken skin side down
- Sear until the chicken skin is nice, brown, and crispy. Stir the garlic cloves around the pan during this process – you will need to take the garlic out when it starts to get too brown
- Flip your chicken over once the skin is crispy
- Place the whole skillet in the oven and bake for 10-15 mins (oven time will vary based on how long you seared the chicken in your pan, but just keep an eye on it)
- When the chicken is done, remove to a plate, spoon some of the garlic butter over top of each thigh, and you’re ready to serve!

- 4 medium chicken breasts, boneless, skin-less
- 1 or 2 red bell peppers, diced
- 2 tablespoons fresh chopped cilantro, for garnish
Marinade:⚓︎
- ¼ cup fresh lime juice
- zest of one lime
- 2 tablespoons olive oil
- 2 garlic cloves, chopped finely
- ½ crumbled chicken bouillon cube, or ½ teaspoon salt
- Fresh cracked Pepper
- 1 teaspoon honey (or brown sugar )
- 1 teaspoon red chili flakes (adjust to taste)

- Whisk the ingredients for the marinade in a small bowl. Cut chicken breasts into cubes and place chicken in a large plastic bag or bowl and add the marinade. Mix well to combine. Seal the bag or cover bowl and place in the fridge to marinate for 30 minutes, or up to 24 hours.
- Pre-heat grill, pan or griddle to medium-high heat. Drain chicken from the marinade and soak wooden skewers in water for 1 minute. Tread the skewers alternating with chicken cubes and bell pepper slices.
- Grill chicken skewers for 5 minutes on each side, drizzling some of the marinade from time to time, until cooked through and lightly charred. Serve immediately on salad, rice, or noodles. Garnish with chopped cilantro and Enjoy! ♥︎
Honey Soy Baked Chicken Thighs⚓︎

- 3 tablespoons olive oil
- 3 tablespoons soy sauce5 tablespoons honey
- 4 cloves of garlic; minced (or substitute ½ teaspoon garlic powder)
- ½ teaspoon ground ginger
- ½ teaspoon fresh ground pepper
- 3 pounds (approximately) chicken thighs (or preferred chicken meat)
- Salt and pepper to taste
DIRECTIONS:⚓︎
- Preheat oven to 425-degrees.
- Mix first 6 ingredients together in a large plastic zip-top storage bag.
- Add salt and pepper to taste.
- Add the chicken to the plastic bag, seal bag and turn chicken to coat each piece, then place in refrigerator to marinate until ready to cook, up to a day ahead.
- When ready to cook, add chicken and marinade to a baking dish in a single layer.
- Bake chicken in a 425-degrees oven for 25 minutes with the skin side up.
- Flip the chicken and cook skin side down for another 10 minutes. Then turn the chicken again to skin side up and finish cooking for another 10 minutes to crisp up the skin, for a total of 45 minutes.
- Cook until internal temperature of chicken reads 165-degrees F.
